Along the Grand Canal, at a few steamboat stops from Rialto, a sumptuous 17th-century palace surrounded by greenery hosts the first and only restaurant in Venice to be awarded two Michelin stars: Enrico Bartolini’s Glam.

In this tucked away place, far from tourists’ indiscreet eyes, you can immerse yourself in the historical and artistic charm of what was once an ancient noble residence, now transformed into a 5-star boutique hotel thanks to a remarkable restoration intervention.

The experience at Palazzo Venart is enriched by the excellent food and wine offering of the starred restaurant: created by multi-starred Chef Enrico Bartolini and the talented Resident Chef Donato Ascani, it is based on the best seasonal raw materials and on the contemporary reinterpretation of the traditional lagoon flavours.

 

A few years after the opening of the restaurant, the entire kitchen is redesigned: the new layout is completely studied by Marrone based on the customer’s precise needs.

The meticulous bespoke design allowed to make the most of the space for optimising storage, and allowed to best develop the flows for each batch. At the centre is the island cooking monoblock: functional and compact, it is equipped with both hot “hold & serve” cabinets and refrigerators, in order to have full cold storage capacity throughout the kitchen.

 

And let’s not forget the wines to pair with the menus! The refined labels are conserved in Mirabilia custom displays by Iglu, the brand of Marrone Group that deals with professional refrigeration. These are three completely tailor-made and coordinated displays: two refrigerated for wines, and a neutral central one dedicated only to goblets, with height-adjustable glass shelves. The matt black external finish, the LEDs along the vertical uprights and the recessed handles express elegance and modernity.
